From Widipedia: A snickerdoodle is a type of cookie made with flour, fat, sugar, and salt, and rolled in cinnamon sugar. Joy of Cooking claims that snickerdoodles are probably German in origin, and that the name is a corruption of the German word Schneckennudel. The Oxford English Dictionary claims the word’s origin is “uncertain”. Other Internet sources claim that the creator of the recipe was Patricia Anfinson who worked at Betty Crocker’s Home Service department. Her original recipe is published in Betty Crocker’s Picture Cookbook in 1950.

- No need for extras: skip the brown butter, pumpkin purée, and brown sugar. The Trader Joe’s cookie mix already has it all.
- ⏱️ Fast and foolproof: you can mix, bake, and enjoy in under 30 minutes.
- 👩👧 Kid-friendly: simple steps make it perfect for baking with your children.
- 🍂 They smell like fall: your kitchen is filled with warm pumpkin spice and cinnamon while they bake.
- 📦 1 pouch Cookie Mix
- 1 pouch Sugar & Spice Mix
- ➕ Add:
- 🧈 1 stick butter (softened)
- 🥛 1 tablespoon cold milk
- 🥚 1 egg
🔥 Don’t overbake: The cookies should look slightly soft in the center when you pull them out and they will set as they cool.
🧂 Roll generously: Coat each dough ball well in the sugar & spice mix for that signature snickerdoodle crunch.
🧈 Use room-temperature butter: It blends more evenly with the mix and gives you a smoother dough.
🕒 Chill if needed: If your dough feels too soft, chill it for 15–20 minutes before baking to help with shape and texture.
👩🍳 Bake one tray at a time: For even color and chewy edges, stick to one rack in the middle of your oven.

How should I store these Pumpkin Spice Snickerdoodle Cookies?
Keep the cookies in an airtight container at room temperature for up to 3 days. If you want them to be softer, add a slice of bread inside the container. It helps keep them chewy.
Can I freeze the baked cookies?
Yes! Let them cool completely, then place them in a freezer-safe bag or container. Freeze for up to 2 months. Thaw at room temperature or warm briefly in the microwave.
Can I make the dough ahead of time?
Absolutely. Prepare the dough, roll it in the sugar mix, and refrigerate it for up to 24 hours before baking. This actually helps the flavors develop even more.
Can I use other store-bought Snickerdoodle Cookie Mix mixes?
There are a few boxed mixes that you can get online or in a store. Betty Crocker Snickerdoodle Cookie Mix, Great Value Pumpkin Spice Cookie Mix, and Williams Sonoma Pumpkin Spice Sugar Cookies Mix are just a few!

Recipe details
Ingredients
- ▢ 1 pouch Cookie Mix
- ▢ 1 pouch Sugar & Spice Mix
- ▢ 1 stick butter softened
- ▢ 1 egg
- ▢ 1 tablespoon cold milk
Instructions
- Preheat oven to 375℉/190℃. Empty Sugar and Cookie Spice Mix into a small bowl; set aside
- In mixer on low speed, blend butter until smooth; blend in egg
- Blend in Cookie Mix and cold milk until a soft dough forms
- Roll dough into 22 balls using about 2 tablespoons per cookie
- Roll each ball into the Sugar and Cookie Mix to coat well and place 2 inches apart on baking sheets. Do not flatten
- Bake cookies for 10 to 12 minutes, or until softly set and edges are golden-brown
- Let cookies cool for 2 minutes on the baking sheets, then remove and place them on a wire rack to cool completely.
Tips
- The recipe suggests rolling the dough into balls. I used a small-size cookie scoop to make the balls, then rolled them into the sugar and spice mix. I find it easier than rolling.
