Happy Tuesday everyone!! Hubby is doing better after his HA so it was time to treat him to his favorite cookies Soft and Chewy Double Chocolate Cookies. I made two batches of these cookies, and here’s why after baking the first batch the cookies came out FLAT!! Flat I say!! I could barely peel them off the baking paper. What is it with me and baking!!??? Granted, I may not be the best Pastry Baker in the world but this is a simple 1, 2, 3 step recipe. This is why I avoid baking because I usually have to try it a few times before I can get it right. Is it me?? I have all the necessary utensils, from scales to spatulas, what! what! what am I doing wrong?!!??
Soft Chewy Double Chocolate Cookie Recipe

Ingredients
- 1 cup All-Purpose Flour
- ½ cup Butter melted
- 1 Egg
- 2 grams (1/2 tsp) Baking Soda
- 5 grams (1 tsp) Baking Powder
- ¾ cups Sugar
- Salt pinch
- 1 tbsp Vanilla Extract
- 1 ½ cups Cocoa Powder
- 2 tbsp Water
Instructions
- In a medium-size bowl add all ingredients except for cocoa powder. Mix until batter is smooth.
- Add-in cocoa powder and mix well.
- Roll 1 tablespoon of cookie dough into a ball for each cookie, and place on baking tray.
- Bake for 25 min (depending on your oven) at 180 C (350 F) and under soft. Set aside to cool.
