Easy Lemon Blueberry Cake Bars (Upgraded Boxed Cake Mix)
Making a fancy looking dessert doesn’t have to be hard. By using a ready made boxed cake mix as my base and adding in a few extra ingredients, I was able to take this basic cake from bland and boring to something truly delicious.
Cutting corners isn’t always a bad thing! Sometimes life gets busy and you can still make a great dessert without compromising on extra time and work.
I guarantee that whoever you make this cake for will be delighted with the rich lemony flavour paired with the delicious baked blueberries. I bet they will never guess that this pretty dessert started in a box.
Start off with a box of lemon cake mix. Ignore the directions on the back of the box and add in 3 eggs, 1/2 cup melted butter, 1/4 cup water, 1/4 cup lemon juice, instead.
Once everything is mixed nicely stir in 1 cup of plain yogurt and 1 cup of fresh blueberries. Adding yogurt to the cake makes it slightly denser, which is perfect when you are making cake bars.
Pour the batter into a well greased baking dish and bake in the oven at 350 for 45 minutes.
While the cake is baking you can prep the icing. Whisk together 1 container of white icing with the juice and zest of 1/2 a lemon. Set aside.
Once the cake has finished baking, remove it from the oven and let cool.
Flip the cooled cake over onto a parchment lined baking sheet.
At this point you can ice the cake as normal. However I like to make mine look a little fancier, so I prefer to cut the cake up into bars and ice them individually.
Spoon on some of that delicious icing and garnish with some lemon zest and a few fresh blueberries.

Cake
- -1 box lemon cake mix
- -1 cup plain yogurt
- -3 eggs
- -1/2 cup butter

Lemon Icing
- -1 container of white icing
- -juice and zest of half a lemon
Instructions
For the cake
- Preheat oven to 350.
- Mix together 1 box lemon cake mix, 3 eggs, 1/2 cup melted butter, 1/4 cup water, 1/4 cup lemon juice
- Add in 1 cup plain yogurt and 1 cup fresh blueberries.
- Pour the batter into a well greased baking dish and bake in the oven at 350 for 45 minutes.
- Remove cake from over and let cool.
- Flip cooled cake over onto a tray and ice it, or cut into bars and ice individually using the lemon icing.
- Garnish with lemon zest and a few fresh blueberries.
- Enjoy!
