Pomegranate Brownies

Ingredients
- 3 large eggs
- ½ cup sugar
- ½ cup butter
- 1½ teaspoons vanilla extract
- ½ cup confectioners' sugar
- ¼ cup plain flour
- ¼ cup cocoa powder
- 1 teaspoon espresso powder
- ½ teaspoon salt
- 100 grams bittersweet chocolate, chopped
- 4 tablespoons pomegranate seeds
Instructions
- Preheat the oven to 325°F (170°C) . Line a metal baking pan with parchment paper, covering the bottom and sides.
- In a small bowl, mix the eggs and sugar. Add in the butter, vanilla, and confectioners' sugar and mix until well combined.
- In another bowl, combine the dry ingredients. Mix the flour, cocoa powder, espresso powder, and salt together.
- Combine the two bowls, mixing until just incorporated. Gently stir in the chopped chocolate. Pour the batter into the prepared baking tin. Sprinkle pomegranate seeds on top.
- Bake for about 20 to 25 minutes. Let the brownies cool completely before cutting up.
