Ingredients

  • 3 large eggs
  • ½ cup sugar
  • ½ cup butter
  • 1½ teaspoons vanilla extract
  • ½ cup confectioners' sugar
  • ¼ cup plain flour
  • ¼ cup cocoa powder
  • 1 teaspoon espresso powder
  • ½ teaspoon salt
  • 100 grams bittersweet chocolate, chopped
  • 4 tablespoons pomegranate seeds
Instructions

Preheat the oven to 325°F (170°C) . Line a metal baking pan with parchment paper, covering the bottom and sides.
In a small bowl, mix the eggs and sugar. Add in the butter, vanilla, and confectioners' sugar and mix until well combined.
In another bowl, combine the dry ingredients. Mix the flour, cocoa powder, espresso powder, and salt together.
Combine the two bowls, mixing until just incorporated. Gently stir in the chopped chocolate. Pour the batter into the prepared baking tin. Sprinkle pomegranate seeds on top.
Bake for about 20 to 25 minutes. Let the brownies cool completely before cutting up.
