Ingredients
For the Dough
  • 2 cups maida (all-purpose flour)
  • 1 cup warm milk (not hot)
  • 1 & 1/2 Instant yeast
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp melted butter
For Garlic Butter
  • 3 tbsp softened butter
  • 4–5 garlic cloves, finely minced
  • 1 tbsp chopped coriander
  • ½ tsp chilli flakes (optional)
  • Pinch of salt
Instructions
Prepare the Dough
In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5 minutes (if using instant yeast, you can mix directly with flour).
Add maida, salt, and melted butter.
Knead for 8–10 minutes until soft and smooth.
Cover and let it proof for 1 hour or until doubled in size.
Shape the Buns
Punch down the dough gently.
Divide into equal portions and shape into smooth balls.
Arrange in a greased air fryer tray, leaving little space between them.
Cover and let them rise again for 20–30 minutes.

Brush buns lightly with milk.
Preheat air fryer at 160°C for 3–4 minutes.
Bake at 160°C for 12–15 minutes until golden brown.
Garlic Butter Finish
Mix softened butter, minced garlic, coriander, chilli flakes, and salt.
Immediately brush generously over hot buns.
Serve warm.
Tips
  • Milk temperature matters – It should be warm (around 40°C). Too hot will kill the yeast.
  • Knead properly – Soft, elastic dough gives fluffy buns. If sticky, add 1 tbsp flour at a time (don’t overdo it).
  • Don’t skip second proofing – This makes buns airy and light.
  • Check early in air fryer – Every model varies. Check at 10 minutes to avoid over-browning.
  • Use foil if browning fast – Lightly cover with foil if tops darken too quickly.
  • Extra softness tip – After baking, cover buns with a clean cloth for 5 minutes to trap steam.
  • For richer flavor – Add 1 tbsp milk powder to the dough.
  • Storage – Store in airtight container for 1–2 days. Reheat 1–2 minutes in air fryer before serving.
