Working in 2 batches, add half the strawberries, 1 cup of water, ⅓ cup lemon juice and ¼ cup honey to a high-powered blender and run for about 2 minutes.

Pour into a pitcher and repeat. Add to the pitcher and add 1 cup of water (or more depending on desired flavor and consistency).

Serve over ice.

Hint: Buying fresh strawberries when they are in season will result is a sweeter, more flavorful drink. When not in season, strawberries can taste dull and watery, I prefer to choose frozen in this case.
