Watermelon Salsa
Watermelon salsa! I know when you hear salsa you think tomatoes, jalapeno, onion, all these beautiful flavors married together. But what screams summer better than watermelon fruit. It is present all summer long in our parties and backyard gatherings. We enjoy watermelon slices, Popsicles, lemonade, and Slushies. Why not include watermelon on savory recipes such as salsa?
Great with chips, tacos, or grilled meat. I am thinking like with grilled chicken kebab, will be fantastic! I took a spin with Mediterranean flavors, by using mint and feta cheese. You will end up with a very refreshing salsa, that you want to make and enjoy all summer. Plus, if you are going to use this as a dip or appetizer, the chili lime pita chips from @toufayan are perfect with this juicy, fresh and beautiful looking salsa!
Watermelon Salsa

Ingredients
- 2 cups diced watermelon
- 2 cups diced cucumbers
- Fresh mint or basil
- 1/2 crumbled feta cheese
- 1/4 cup of lime juice
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Dice enough watermelon to measure two cups
- Dice cucumber small size. Chop fresh mint or basil
- In a bowl combine watermelon, cucumber, fresh mint, feta cheese, salt and pepper.
- Mix everything together and taste for seasoning. Add more lime juice if needed
Tips
- Use lemon instead of lime. It is still very refreshing and delicious.
- Feel free to add more summer vegetables, such a s corn!

It sounds good, but how much crumbled feta cheese? 1/2 cup?
