Ingredients

  • ½ block firm tofu, pressed and cut into cubes
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch
  • ½ cup breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1 tbsp olive oil (for cooking)
  • 2 tbsp buffalo sauce
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • ½ cup mushrooms, sliced
  • ½ cup butternut squash, cubed
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ÂĽ tsp black pepper
Instructions

Coat the tofu cubes with soy sauce.
Toss them in cornstarch, breadcrumbs, garlic powder, paprika, and black pepper until evenly coated.
Heat olive oil in a pan over medium heat.
Cook the tofu for 5-7 minutes, flipping occasionally until crispy and golden brown.
Remove from heat and toss the tofu in buffalo sauce until fully coated.
In the same pan, heat olive oil and add the butternut squash.
Cook for 5 minutes, stirring occasionally.
Add the red and green bell peppers and mushrooms.
Season with garlic powder, salt, and black pepper.
Stir and cook for another 5-7 minutes until the vegetables are tender but still slightly crisp.
Serve the buffalo tofu alongside the stir-fried vegetables and enjoy!
