Chilled Strawberry Soup

Oh my this is so good! It is perfect for a bridal luncheon or a baby shower. I made if for a birthday party. It was a big hit. It definitely is not too sweet but just perfect. I add a dollop of whipped cream to the top just because. I used fresh picked strawberries but you can use frozen. I have used both before. I made this for my daughters bridal shower years ago and had forgotten about it. Until I was looking for something cute to make for my sisters birthday party. I mixed everything in the blender and just kept it in there until I was ready to serve it. So it was a one dish recipe which made clean up so easy too. Which is always a big plus!!

Here are my strawberries cleaned, hulled and ready.

I pureed them first in the mixer.

I added everything else in and pureed until all mixed and pretty.

Love that pretty pink it makes. Place in the refrigerator for at least two hours before serving.

Here it is all ready in a pretty milk glass bowl. You can add a scoop of homemade or ready made whipped topping which adds just a little more creaminess. It tastes just as wonderful without the addition.

Ingredients
For the soup
  • 2 quarts strawberries, hulled and cleaned.
  • 2 c sour cream
  • 1 t vanilla extract
  • 1/4 c sugar
  • 1 c half and half
Instructions
Strawberry soup
In a blender mix all ingredients together. I pureed them.
Refrigerate for at least two hours
Serve in individual bowls and top with whipped cream if you want.
