Hamburger Soup

Ingredients
- 2 lb ground beef (lean)
- 1 onion (diced)
- 2 tbsp. minced garlic
- 4 tablespoon tomato paste
- 3 cups low sodium beef broth
- 28 ounces canned diced tomatoes (with juices)
- 1 medium potatoes (peeled and diced into bite sized pieces)
- 1 tablespoon Italian seasoning (or 1 teaspoon each dried oregano, basil, parsley)
- 1 bay leaf
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 3 cups frozen mixed vegetables
Instructions
- In a pot over medium heat cook ground beef, stirring until no pink remains. Drain excess fat if necessary.
- Add in the onion and garlic and continue stirring until softened
- Add the tomato paste and stir until evenly combined.
- Add in the broth, canned tomatoes, potatoes, Italian seasoning, bay leaf, salt and pepper. Stir to combine, then bring to a boil.
- Reduce the heat, then cover the pot and simmer the soup for at least 30 minutes, until potatoes are fork tender.
- Stir in vegetables. Cook for an additional 5-10 minutes or until veggies are tender.

Tips
- Store in an air-tight container for up to 5 days or freeze in a freezer bag for up to 3 months.

Never knew this was an actual recipe. I've made this for years as "sick"soup. Delicious and easy on sick tummies. Anytime someone in the house got sick whether flu cold bronchitis sinus infection...any sickness this is what is made in my house for dinner for everyone. Hydration comes in many forms , love that this is a known recipe you learn new stuff all the time.
