I am always on the go and very busy, I like to spend as little time as possible cooking but I want a good healthy and hearty meal as much as possible. This chilli recipe is pretty easy and quick as you can throw everything into a big pot essentially and have a great whole meal after. I like to eat it with some whole wheat bread as well. You can always swap the ground beef out for turkey or chicken if you would like, making sure you are still fully cooking those meats appropriately as well. I have made this recipe so much that it has become an expectation from my friends that I will likely be serving this when they come over and they always look forward to it. I hope you enjoy this recipe.

Ingredients

  • 1 celery stick
  • 1 carrot
  • 1 white onion
  • 1 can of cooked black beans
  • 1 can of cooked red beans
  • 500mL of beef broth
  • 500g ground beef
  • 1 can crushed tomatoes
  • 1/2 tablespoon of garlic powder
  • 1/2 tablespoon of chilli powder
  • 1 tablespoon olive oil
  • salt and pepper to taste
Instructions

Thinly chop your onion, carrot and celery
Add onion, carrot and celery to a pot with olive oil and cook on medium heat
When onions are translucent add in your ground beef and your seasonings
When ground beef is fully cooked add in your crushed tomatoes, beef broth and beans
Bring the pot to a boil
