Ingredients
- 1 head of gem lettuce or romaine lettuce
- 1/2 cup cottage cheese (120g)
- 1/4 cup pomegranate seeds (40g)
- 1/2 red bell pepper and 1/2 yellow bell pepper (cut into small shapes)
- 1 can of chickpeas (15 oz / 400g), rinsed and drained
- 1 teaspoon extra virgin olive oil (5ml)
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt to taste
Instructions
- Prepare the Crispy Chickpeas:
- Rinse and drain the chickpeas, then toss them in a bowl with olive oil, paprika, oregano, and a pinch of salt.
- Air fry at 360°F (180°C) for 15 minutes, shaking halfway, or roast in the oven at the same temperature for 20–25 minutes until crispy.
- Assemble the Christmas Tree Base:
- Lay out the lettuce leaves on a large platter, starting with the largest leaves at the bottom and working your way up to form a tree shape.
- Decorate Your Tree:
- Use cottage cheese dollops, crispy chickpeas, and pomegranate seeds as ornaments.
- Cut the red and yellow peppers into small star shapes to use as decorations, or place a larger pepper star at the top of the tree.
- Optional Extra Touch:
- Use leftover pepper pieces to create small “presents” to place around the base of your salad tree.
- Serve immediately and enjoy the festive crunch!
