The only thing better is making the recipe easier with a slow cooker.
This slow cooker fajita chicken recipe can be customized endless ways and toppings for this salad can include:
- lettuce
- guacamole
- french dressing
- ranch dressing
- hot sauce
- tortilla chips
- shredded cheddar cheese
- sour cream or plain Greek yogurt

Slow Cooker Fajita Chicken Salad
Recipe details
Ingredients
- 6 chicken breasts
- 1 pepper, diced
- 1 onion, diced
- 28 oz can diced tomatoes, drained
- 1 tsp garlic powder
- 3 tbsp taco seasoning
Instructions
- Place the chicken in the bottom of a slow cooker.
- Place the diced veggies on top of the chicken.
- Mix the diced tomatoes, garlic powder, and taco seasoning.
- Pour over the chicken and veggies.
- Cook on high for 2-3 hrs or low for 4-6 hrs.
Freezing Instructions
- Place all the ingredients in a slow cooker freezer bag and freeze flat. Thaw overnight in the fridge prior to cooking. Cook acoording to the directions above.
