Pesto Peas & Potato Chicken Salad

Hello Foodie Friends,
Here in Los Angeles we are still getting some warm weather, so today it calls for a delicious and refreshing cold Pesto Peas & Potato Chicken Salad. refreshing combo and perfect for meal prep and keep int he fridge for a couple of days.
Great combo of flavors on each bite. I combined the following ingredients:
- 1 cup of shredded chicken breast
- 1 cup of cooked potatoes
- 1/2 cup of cooked peas
- 2 TBsp of pesto sauce ( mix pesto, Greek yogurt, mayo, salt& pepper, lemon juice in a bowl)
- 1/4 cup of green olives (Castelvano my faves)
- chives
- drizzle of @garciadelacruzoliveyou
In a large bowl add all the ingredients, mix together, refrigerate for at least one hour.
Can't get easier than this!
Just make a double batch to keep for your office lunches or bring to your next pot luck lunch.
This combinational of flavors is just perfect.
Simple of ingredients, that you may already have in your fridge or pantry.
Easily plated and garnish with olives, with some more pesto and parsley.

Ingredients
- 1 cup of cooked shredded chicken breast
- 1 cup of cooked potatoes
- 1/2 cup of cooked peas

- chives for garnish (about 6 chives)
- drizzle of Organic extra virgin olive oil @garciadelacruzoliveyou
Pesto Sauce
- 1 Tbsp of pesto
- !/4 cup of Greek yogurt
- 1 Tbsp of mayonnaise,
- 1 tsp of lemon juice
- salt & pepper to taste
Instructions
- First, make the pesto sauce. Add all the ingredients into a bowl and set aside in the fridge.
- Second, in a large bowl add the potatoes, chicken, peas, olives and add desired amount of the pesto sauce.
- Refrigerate at least 1-2 hours before serving.
- Garnish with a drizzle of pesto, chives.
Tips
- Store in the fridge for at least 1 hour before serving.
