Lemongrass Chicken Bowl

This is a super fresh bowl and is entirely gluten free. Almost everything in this bowl was marinated including the carrots, cucumbers, and chicken. Marinating food is such a simple way to increase the flavor in ingredients and it doesn't have to take long at all. I marinated the veggies while cooking the chicken and by the time I was ready to put the dish together, the veggies had soaked up all those delicious flavors!
I also scored the chicken breast to help absorb the marinade. You could substitute chicken breast for thighs, tofu, or shrimp.

Ingredients
For the Chicken
- 2 chicken breasts
- 2 cloves garlic, minced
- 2 tbsp lemongrass
- 1 lemon or lime, juiced
- 1 tbsp fish sauce
- 3 tbsp tamari sauce
- 2 tbsp honey
For the Veggies & Noodles
- 1 carrot, julienne
- 1 tsp gocharu
- 1 tbsp rice vinegar
- 1 small cucumber, sliced
- 1 tbsp tamari sauce
- 200g vermicelli noodles
- 1 avocado, diced
- 2 tbsp white sesame seeds (optional)
- 2 tbsp black sesame seeds (optional)
- Lettuce & sliced tomatoes to serve (optional)
- Sriracha to serve (optional)
Instructions
For the Chicken
- Mix the marinade by combining minced garlic cloves, lemongrass, lemon juice, fish sauce, tamari, and honey in a bowl
- Reserve 1/2 - 1 cup of the marinade in a separate bowl for later
- Score the chicken then place into the marinade for at least 30 minutes
- Heat a pan (add oil if the pan is non-stick) then place the chicken on the pan
- Cook the chicken for 8 minutes on one side, then flip
- Once the chicken is nearing fully cooked, add the reserved marinade
For the Veggies & Noodles
- In one bowl, marinate the carrot sticks with rice vinegar and gocharu
- In another bowl, marinate the sliced cucumber in tamari sauce
- While these marinate, cook your vermicelli noodles as per labelled instructions
- One green onion, sliced
- Lastly, coat your avocado with the black and white sesame seeds (this is optional but gives them a nice crunch!)
- Serve the noodles, veggies, and chicken with lettuce, tomato, and sriracha if desired
- Be sure to get all the saucey marinade onto your bowl!
Tips
- Marinate the chicken and/or use chicken thighs overnight for more flavor
