Georgian Lobio - Kidney Bean Salad
There is a great Georgian dish that everyone in my family has a slightly different spin on. I took some time to get everyone's recipes and there was a lot of overlap for me to create it myself! This dish is a delicious side or great on its own packed with Mediterranean flavor.
Start by dicing garlic and onion.
Sauté the onion and garlic in a small pot with olive oil for about 20 minutes until they are caramelized and golden.
This part smells amazing!
Then you will want to chop up 1/2 a cup of walnuts.
Wash and drain the can of red beans and add them to the same pot as the sautéed onion and garlic along with the chopped walnuts.
Add 1 cup of water, salt and pepper to taste.
Mix everything together and cook on low heat for 1 hour, stirring occasionally.
Once everything starts breaking apart the dish is done and will start looking more like a spread or a paste.
Chop parsley and add to the cooked dish and transfer to a bowl.
Cool in the fridge for 20 minutes and ENJOY!

Ingredients
- 1 can red kidney beans
- 1/2 chopped onion
- 1/2 cup chopped walnut
- 3 cloves chopped garlic
- salt and pepper to taste
- 1 cup of water
- 1/4 cup chopped parsley
Instructions
- dice garlic and onion and add to a small pot with olive oil to sauté for 20 minutes
- add washed kidney beans and chopped walnuts to the pot
- add salt and pepper to taste and a cup of water
- cover and cook on low heat for 1 hour, stirring occasionally
- add chopped parsley and cool in the fridge for 20 minutes
