Ingredients

  • 1 cup cooked or frozen broad beans (double-podded if large)
  • 1 can (14 oz / 400g) butter beans, drained and rinsed
  • 1/2 cup green olives, pitted and halved (e.g. Castelvetrano or Manzanilla)
  • 2 tbsp red onion, very finely chopped (optional)
  • Salt and pepper, to taste
For the green herb dressing:
  • 1 packed cup fresh parsley (or parsley + mint or basil)
  • 1 garlic clove
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • Zest of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1–2 tbsp water to loosen (as needed)
Instructions

In a food processor or blender, combine the parsley, garlic, mustard, lemon juice, zest, olive oil, salt, and pepper. Blend until smooth and vibrant green. Add a splash of water if needed to thin the dressing to a pourable consistency.
Place the broad beans, butter beans, and green olives in a large bowl. If using red onion, add it now. Gently toss to combine. Pour over the herb dressing and stir carefully to coat everything without breaking up the beans too much.
Taste and adjust seasoning. Serve slightly chilled or at room temperature, with extra herbs or lemon zest on top if desired.
