Chicken Meatballs

I use a lot of ground chicken every week, it’s so versatile for tacos, meatloaf, burgers and these chicken meatballs that I make on repeat, they’re delicious and freeze wonderfully for quick meal prep during busy weeks! I use them alongside veggies or even on salads.

These chicken meatballs stay moist because of the addition of veggies, no dry chicken here!

One pound of chicken will make 15 meatballs or so depending on how big you make them

I use 1/2 of a (thawed and drained of all the liquid) frozen container of chopped spinach

I use scallions in these, the flavor is a little milder than onion, but you can certainly use that if you wish

Place the chicken in a mixing bowl

Add 4 chopped scallions, white and green parts

Add one tablespoon of minced garlic

Add the chopped spinach

And one egg

I season to taste, sea salt and pepper, onion powder and I like this citrus garlic seasoning from Trader Joe’s, but this Recipe is totally customizable, add the seasonings and spices that you like in your meatballs. Combine the mixture thoroughly until all the ingredients are incorporated

Line a baking sheet with parchment paper and I give it a quick spray of nonstick olive oil spray

I use a large cookie scoop so that all the meatballs are approximately the same size

Bake at 350° for 20 to 25 minutes, Or until cooked through

Ingredients
For the meatballs
  • 1 pound ground chicken
  • For scallions, diced
  • 1/2 of a container, frozen chopped spinach, thawed, and drained thoroughly (Approximately one cup)
  • One egg
  • sea salt, pepper, onion powder to taste
Instructions
To make the meatballs
Heat oven to 350
Line a baking sheet with parchment paper and give it a spray of olive oil Nonstick spray
combine all ingredients in a mixing bowl until they are fully incorporated
using a large cookie scoop or roll with your hands, make the meatballs and place them on the baking sheet
Cook for 20 to 25 minutes
Tips
  • To customize these meatballs, consider making them with Mexican or Asian spices
