Ingredients

  • 1 1/2 cups jasmine rice
  • 2 1/4 cup water
  • 3/4 tsp salt
  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 tbsp + 1 tsp Trader Joe’s Cuban Style Citrusy Garlic Seasoning Blend
  • 3/4 tsp sea salt
  • 1 tbsp extra virgin olive oil
  • 1 bag Trader Joe's Avocado Ranch Salad
Instructions

Cook the rice. Add the rice, water and salt to a medium-sized pot and bring to a boil. Lower the flame to a simmer and cook for 15-20 minutes, until done. Set aside.
While the rice is cooking, season the chicken thighs with citrusy garlic seasoning and sea salt on both sides.
Heat a large skillet over medium-high heat.
Add the olive oil to the pan and when it is shimmering, add the seasoned chicken thighs, smooth side down. Cook for 2-3 minutes until golden and then flip.
Lower the flame to medium and continue to cook for another 2-3 minutes until the chicken is cooked through.
Remove from the pan and place on a cutting board to rest.
In the meantime, open the avocado ranch salad and remove the packet that contains the dressing, cheese and chips. Place the salad in a large bowl. Toss with desired amount of dressing and toss well.
*Optional) mix warm rice directly into the salad mix and toss, or keep the rice separate.
Slice the chicken and assemble the bowls.
Top each bowl with a little cheese and chips from the salad kit.
