Smoked Gochujang Yogurt Chicken Thighs
Smoking meat has opened up a whole new world of cooking for me. In the past, I’ve never been a huge fan of smoked meats because they tasted too smoky for me. I learned that a lot of the smoky taste was just too artificial for me whereas smoking the meat myself means that I can control the type of wood I’m smoking with and how much of the smoke I infuse into my cooking.
I learned a while ago that adding yogurt to a marinade for protein keeps it nice a tender. I’ve used it on chicken and fish before and I have to say I love it! Since I’ve been on a Korean food craze lately I decided to experiment mixing it with gochujang. The combination really works! The cool and tangy yogurt mixed with the sweet and spicy gochujang is a match made in heaven. Smoking and grilling the meat after adds a layer of additional flavor. Smoked Gochujang Yogurt Chicken Thighs

Ingredients
Chicken thigh marinade
- 6-8 boneless chicken thighs (skin on or off)
- 1/2 cup plain Greek yogurt
- 2 heaping tbsps gochujang
- 2 tbsps soy sauce
- 1 tbsp sugar
- 1.5 tsp kosher salt
- 4 garlic cloves, finely minced
- 1/4 onion, finely chopped
Sauce for serving
- Reserved 1/4 cup of marinade
- 2 tbsps mayo
- splash of vinegar/lemon juice
- scallions, finely chopped
Instructions
- In a large bowl, add in all of the marinade ingredients and mix well. Scoop out 1/4 cup and reserve for the sauce.
- Add in chicken thighs to the marinade and mix well. Refrigerate and marinate overnight.
- Next day, heat up your smoker to 200F. Give it at least 10 minutes to come up to temperature.
- Add in the chicken thighs and smoke for 30 minutes. After 30 minutes, increase the temperature to 375F and smoke for an additional 30 minutes.
- While the chicken is smoking, take the reserved marinade and mix it with the mayo and a splash of lemon juice. Mix well.
- Remove the chicken when done and drizzle with the sauce and top with chopped scallions. We love it served with rice.
