This delicious nut and date chicken cutlet recipe is one of my absolute favorites. It's great for a mid week meal with some rice, and freezes great for meal prep. I love the combination of flavors and the sweet smells that waft out of the oven from this dish. You can leave the chicken in the oven for a few minutes on grill if you want to brown the chicken a little on the top, but make sure not to over do it, as the chicken can easily become dry! Store in an airtight container for a maximum of 4 days, heat up in the microwave for a few minutes and you are ready to go!

Ingredients
- 1/4 cup red wine vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cloves garlic, minced
- Juice of 1 large orange
- 8 dates, halved and pitted
- 2 tbsp slithered almonds
- 3 kg chicken thigh cutlets
Instructions
- Preheat the oven to 180 degrees and prepare a small, square oven dish.
- In a large bowl, mix together all ingredients except for the chicken until well incorporated.
- Add in the chicken and use a spoon to help toss the sauce aroud the chicken to marinate it.
- Place the chicken in the prepared dish and pour the sauce on top.
- Cover the dish with aluminium foil and cook for 30 minutes. Remove the foil and cook for a further 30 minutes or until the juices run clear.
