Ingredients

  • 8 Boneless chicken legs or slices of chicken breast
  • 200g of Ham
  • 200g of Mozzarella cheese
  • 4 Onions
  • Salt & pepper
  • Rosemary
Breadcrumbs mixture
  • Wheat flour
  • 3 Eggs
  • Breadcrumbs
  • Parmesan cheese
  • Parsley
  • Salt & pepper
Instructions

Using a meat tenderizer, gently pound the chicken legs to thin and evenly coat, then salt and pepper on both sides.
Tip: If you're using chicken breasts, marinate them in a little olive oil. This will soften the chicken.
#2 Place the chicken on a flat surface, place a piece of ham and a slice of mozzarella on top and roll the chicken onto itself to make a roll.
Do not overstuff the roll or the cheese will leak out.
#3 Pour enough flour into a bowl. In a second bowl, mix the breadcrumbs, parmesan, parsley, salt and pepper. Beat the eggs in a third bowl.
#4 Dip the chicken in the flour first, then in the eggs and at the end in the seasoned breadcrumbs, pressing it a little so that the breadcrumbs stick perfectly to the chicken.
#5 Prepare a baking tray with an onion bed and place the breaded chicken.
#6 Bake the breaded rolls at 180°C for about 20-25 minutes, sprinkling them with extra virgin olive oil and rosemary.
