I've been on such a curry kick lately! Since going gluten free, rice is in almost all of my dinners but this is my favorite meal. It comes together in no time and requires such minimal ingredients. I personally do not make my own curry paste, but if you have the extra time and ingredients then you definitely could. Most grocery stores will have pre-made curry paste.
Substitute chicken for shrimp, veggies of choice, tofu, fish, or other protein. Add chili flakes, red Thai chili peppers, and or hot sauce for some extra spice!

Thai Green Chicken Curry

Ingredients
- 2 - 3 tbsp green curry paste
- 1 chicken breast, sliced
- 400ml coconut milk (1 can)
- chili flakes to taste
- Rice to serve
Instructions
- Slice the chicken breast
- Add 2 - 3 tbsp of green curry paste to a pan on medium heat
- Add a can of coconut milk and heat until the curry dissolves
- Add sliced chicken and cover the pan with a lid for approximately 10-15 minutes until the chicken is fully cooked
- Serve over rice & enjoy!

What is the green vegetable? Missing something?
I’d say basil and chopped green onion.
