Roasted Boneless Herb Turkey Breast
Our family is not fond of dark meat, so I always make a boneless roast turkey breast, not a whole turkey. Admittedly, roasting a whole turkey intimidates me, especially the brining part. However, this recipe is super easy and doesn't take very long to prepare. It always comes out moist and delicious. The trick is to use a meat thermometer and take it out of the oven when the internal temperature reaches 160 degrees F. I made a 3.5 pound turkey breast and it fed 5 people with enough leftovers for dinner the next night once I added a couple of side dishes. Make a rub of the seasonings, drizzle olive oil on your raw turkey breast, put the rub all over it, add some fresh herbs and place in the oven. The smell in the house, while it roasts, is awesome.

Ingredients
- 3.5 lb boneless turkey breast
- 1 TBSP olive oil
- Make a rub with 1 TBSP Garlic Powder; 1 TBSP Onion Powder; 3 tsp paprika; 1 tsp salt; 1 tsp pepper; 1 tsp oregano; 1 TBSP dried sage or fresh; 3 tsp dried thyme or fresh
Instructions
- Pre-heat oven to 450
- Rub turkey breast with olive oil
- Put seasoning rub all over the turkey
- Place turkey breast in a greased roasting pan
- Add meat thermometer to the thickest part of the turkey breast.
- Place in the oven on the middle rack uncovered for 30 minutes to brown the skin and sear in the juices
- Add foil loosely over the roasting pan and continue to roast until the internal temperature reaches 160 degrees F. Remove turkey and place on a cutting board with foil loosely covering. Let rest 10-15 minutes.
- Carve turkey and serve immediately
