There are so many different types of potato chips. You could probably eat a different variety everyday for weeks! Did you ever think of cooking with these tasty snacks?

Here are three unique recipes using three different flavors of chips that will be sure to have you looking a these salty treats in a whole new way.

We will use barbeque kettle, thin and crispy regular, and salt & vinegar kettle chips.

Barbeque Crusted Chicken Breast

Using kettle chips gives these birds an extra crunch because they are cut thicker plus the barbeque is already on the chip!

Potato Chip Cookies

Having just a hint of the salt in this sugar cookie recipe means using thinner, regular flavored chips!

Salt & Vinegar Crusted Fish

Salt & vinegar chips add the tang for this fish dinner and using the thicker, kettle chips gives the coating a great crunch!

Ingredients
Barbeque Crusted Chicken Breast
  • 4 skinless boneless chicken breasts
  • salt
  • 2 eggs
  • 1⁄2 cup coarsely crushed kettle-cooked barbeque potato chips
Potato Chip Sugar Cookies
  • 2 cups salted butter, softened to room temperature
  • 1 1⁄2 cups granulated sugar
  • 3 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 cups crushed Lays Potato Chips
  • 1⁄4 cup powdered (confectioner’s) sugar, for dusting over the tops of the cookies
Salt & Vinegar Crusted Fish
  • 2 white fish filets  
  • salt
  • 2 Tablespoons mayonnaise
  • 1⁄2 cup coarsely crushed kettle-cooked salt-and-vinegar potato chips
Instructions
Barbeque Crusted Chicken Breast
Preheat oven to 400 degrees F
Prepare a baking sheet with parchment paper and place a cooling rack on top to create a baking rack.
Add about 2 cups of potato chips to a gallon freezer bag and seal. Gently roll a rolling pin over the chips to crush into small flakes.
Pour the crushed chips into a shallow bowl.
In a shallow bowl, whisk the two eggs until smooth.
One at a time, dip both sides of the chicken breasts into the egg then place in the bowl with the potato chips.
Place the crusted chicken breast on the baking rack. Repeat with the remaining chicken breasts.
Bake for 18-20 minutes or until the chicken has an internal temperature of 165 degrees F.
Potato Chip Sugar Cookies
Preheat oven to 350 degrees.
In mixing bowl, cream together softened butter and sugar with an electric mixer until light and fluffy
Add vanilla and mix it again.
Add flour, one cup at a time, and mix well.
Add potato chips and fold in with a rubber scraper.
Scoop a teaspoonful of cookie dough into the palm of your hand, roll into a ball, and place on an parchment paper lined cookie sheet.
Press one cookie with the bottom of the drinking glass to flatten.
Bake for 8 to 12 minutes
Remove from oven and allow to cool for 2 minutes.
Dust the hot cookies with powdered sugar and allow to cool completely.
Salt & Vinegar Crusted Fish
Preheat oven to 400°F.
Prepare a baking sheet with parchment paper and place a cooling rack on top to create a baking rack.
Arrange fish on the rack.
Sprinkle with salt.
Coat top of each fillet with mayonnaise.
Cover completely with crushed chips, patting gently.
Bake 12 to 15 minutes, depending on thickness of fish, until fish flakes easily with a fork.
Tips
  • Cookies can be kept in a covered container up to two weeks.
  • Any flavor of potato chips can be used in any of these recipes.
