French Onion Soup in a Bread Bowl
Nothing hits better then a warm French onion soup this time of year, and I think you might as well just serve it in a bread bowl!
Start by caramelizing 4 sliced onions in olive oil for 15 minutes covered on low heat. I personally like sweet onions or a mixture of a few different yellow onions. Add chopped garlic and continue to cook.
Deglaze with 1 cup of dry white wine. Add 3 cups of beef broth and all your spices and continue to cook for 15 minutes (I like salt, pepper, dried oregano, bay leaf, and thyme). If I had any left over beef I would add that back in or cook beef stew meat into the soup. I didn't have that this time around so next time!
I took an extra step by baking sourdough bread loaves but you can also bake regular rolls, or buy regular rolls! What ever floats your boat.
Cut and scoop the bread and add a slice of Gruyere cheese.
Bake in the oven for 10 minutes to melt the cheese and enjoy!

Ingredients
- 3 tablespoons of olive oil
- 4 onions - sweet and or yellow
- 1 cup dry white wine
- 3 garlic cloves
- 3 cups beef broth
- spices to taste: salt, pepper, thyme, fennel
- gruyere cheese
- bread bowl
Instructions
- slice onions and cook in covered pan for 15 minutes with olive oil
- add garlic and cook until golden and translucent
- deglaze with white wine
- add beef broth and spices
- cook for 15 minutes
- pour into a bread bowl
- add cheese and back in the oven for 10 minutes until melted
