Growing up, (and now) monster cookies were always one of my favorite things that my mom baked. Often times she would make them into bars which were obviously just as good. I love me a good monster cookie or bar, but I know they are not the healthiest. One day I was making pancakes out of Kodiak Cake flapjack and waffle mix, and I saw that there was a chocolate chip cookie recipe on the back of the box. This got me brainstorming a protein monster cookie. After some trial and error, I came up with the perfect ingredients and measurements to “healthify” your basic monster cookie. Packed with over 70 grams of protein in the whole pan, no need to feel guilty about these!

Ingredients
- 1/4 cup softened butter
- 1/3 cup pure maple syrup
- 1 egg
- 1/2 cup peanut butter
- 1 tsp vanilla extract
- 3/4 cup Kodiak Cakes pancake mix
- 1/2 cup oats
- 3 Tbsp hemp seeds
- 1/3 cup m&ms
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350°.
- In a large bowl, add softened butter, maple syrup, egg, peanut butter, and vanilla.
- Mix until combined.
- Then stir in kodiak pancake mix, oats, and hemp seeds.
- Fold in m&ms and chocolate chips.
- Add to a square baking pan greased or lined with parchment paper and spread out evenly.
- Top with extra m&ms and chocolate chips.
- Bake for 25-30 minutes or until the top is golden brown and set.
