  • 2 medium sweet potatoes peeled and diced small
  • 1 tablespoon olive oil

  • 1/2 red onion chopped
  • 1/2 red bell pepper chopped

  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
  • 1 teaspoon balsamic vinegar
  • 4 large eggs
  • 1 tablespoon Fresh parsley chopped
Instructions

Microwave the diced sweet potatoes with a splash of water in a covered bowl for 3–4 minutes until slightly tender. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic, onion and bell peppers. Cook for 4–5 minutes until softened.
Stir in the smoked paprika, ground cumin, salt, and pepper. Sauté for 1 minute.
Add the par-cooked sweet potatoes to the skillet. Cook for 8–10 minutes, stirring occasionally, until they’re golden and crisp in spots.
Splash in the balsamic vinegar and stir for 30 seconds to coat everything.
Make small wells in the hash and crack eggs into them. Cover and cook 3–5 minutes until the whites are set and yolks are to your liking.
Garnish with parsley and add optional toppings like avocado or hot sauce.
