White Chocolate Orange Cranberry Cookies

2 Reasons to Make These Cookies…
I created these White Chocolate Orange Cranberry Cookies for two reasons…
One, it’s citrus season. We still need cookies even after the holidays, but let’s brighten them up with some fresh citrus flavours. And two, because who else has leftover cranberries from the holiday season because they bought a whole bunch to make cranberry sauce and then was surprised by their amazing mother who went ahead and just made all the cranberry sauce? Just me? If you’re not that lucky I’m sure you can still find some in the store.
Orange, cranberry and white chocolate is one of my all time favourite flavour combos. Something about these three flavours together is just perfection. It’s heavenly in my Orange Scones with Fresh Cranberries and White Chocolate too – in case you want justify kind of eating these cookies for breakfast.
For now just know that these cookies are buttery, chewy and so easy to make – no dough chilling required because I hate dough chilling. I’ve even added an optional (but mandatory) splash of Grand Marnier should you choose to add it (you should) to make these cookies extra special. It’s also to make me forget about Dry January, but that’s another conversation.
Butter – I use salted butter exclusively and I’m ok with that.
Sugar – we’re using regular sugar and adding in light brown sugar as well for maximum chewiness.
Extracts – I use vanilla extract and orange extract in this recipe to amp up the orange flavour.
Grand Marnier – this is just a little extra add in that gives a lovely depth of flavour and makes these cookies feel special.
White Chocolate – I use white chocolate chips, but you can use chunks or chopped white chocolate.
Cranberries – you can easily use dried cranberries in these cookies, but because I want them to be a little more tart I like to use chopped fresh cranberries.
White Chocolate Orange Cranberry Cookies Recipe Variations:
Dried Cranberry Version – just use dried cranberries in place of the fresh ones.
Dark Chocolate Version – use chopped dark chocolate or dark chocolate chunks in place of the white chocolate chips.
Grab a mixing bowl and toss in the flour, milk powder, salt, baking powder, and baking soda. Give it a good whisk to combine it all and set it aside for now.
Next, in the bowl of your favourite electric mixer, add the melted butter, sugar, and brown sugar. Let the mixer whiz away for a good five minutes or so until the mixture is super creamy.
Now for the flavour makers… add in orange zest, some vanilla and orange extracts, an egg, and, if you’re feeling spicy, a little dribble of Grand Marnier. Pro tip: the Grand Marnier isn’t mandatory, but it adds this lovely depth of flavour that’s pretty darn special and makes me forget Dry January for a minute. Beat this all together for a few more minutes until the mixture gets light, fluffy, and dreamy
Now add in your dry ingredients into the wet mixture and mix just until combined and then gently fold in the white chocolate chips and chopped fresh cranberries.
Use a cookie scoop or a spoon to drop mounds of dough onto a baking sheet and pop them into the oven until the edges are lightly golden, but the centres are still soft.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely—or eat one while it’s still warm because you totally deserve it.
