Hello Foodie Friends,


This fried rice recipe cannot be more simple and easy than this one. It is a must try and brings all the summer vibes. I love to serve it over pineapple to ELEVATE the presentation.


I like to use wild Argentinean shrimp, sweet baby gold pineapple, coconut aminos for a healthier version. To expedite the recipe I pre- cook white rice, or you can make a quick version in the rice cooker.


I like to start with a good organic extra virgin olive oil and my friends from Garcia de la Cruz have the best Spanish olive oil. Then make a soffrito base with onions, bell peppers, garlic and fresh ginger for a nice kick.


Then sear the shrimp fro a couple of minute and remove from the heat. You then want to combine the rice, coconut aminos and pineapple pieces then bring the shirmp and sofrito mix to continue to cook. The best garnish are fresh cilantro leaves.

All the flavors are incorporated and ready to serve. Simply garnish with fresh chopped cilantro.

Ingredients

  • Shrimp Pineapple Fried Rice 
  • Recipe: 
  • 1 lb of Shrimp 
  • 2 cups of cooked rice 
  • 1/2 cup of pineapple pieces 
  • 2 tbsp of coconut aminos 
  • 2 tbsp of Organic EVOO @garcia
  • Refrito: 
  • 1/2 onion 
  • 1/4 cup of bell peppers (cut into cubes)
  • 2-3 cloves of garlic 
  • 1 tsp of minced ginger  
  • Salt+ pepper to taste  
  • Cilantro for garnish  
Instructions

In a hot pan add 1 tbsp of EVOO, then add onions, peppers, ginger and sautee for 2 minutes
then add garlic and sautee for 2 more minutes, then remove from heat.
In the same pan add 1 tbsp of EVOO then sear the shrimp for about 1 minute each side, season with Salt+pepper, add coconut aminos and pineapple. Cook for 3-4 minutes before adding the warm cooked rice.
Combine , adjust salt and pepepr to taste and garnish with cilantro and ready to serve! 
Tips
  • For low carb option, swap the white rice for cauliflower rice.
