No matter what your opinion is, I'm sure this election (as well as the general state of the universe) is making you want to reach for some comfort food (or maybe celebration food!). Thankfully, I've got just the thing. This vegan vodka sauce is comforting, easy, and so delicious.

When it comes to tomato-based pasta sauces, I've always favored vodka sauce. What's not to love? Typically, it is so delicious from adding copious amounts of heavy cream and parmesan cheese.

This vegan vodka sauce skips out on the dairy by using coconut cream! Even better, this vegan vodka only needs 5 main ingredients.

Ingredients

  • 1 large shallot diced
  • cup vegan butter
  • 1 tbsp tomato paste
  • 1 oz. vodka or another clear spirit
  • cup coconut cream
  • 1 tsp salt
  • tsp onion powder
Instructions

In a hot pan or saucepot, toss in the 1/4 cup of vegan butter.
Add in the diced shallot and saute until the shallots are translucent
Stir in the tomato paste
Turn up the heat and add the 1 oz of vodka
Cook down vodka until it is no longer fragrant
Turn the heat back down to medium and add 1/2 cup of coconut cream
Stir well to combine, and season with salt and onion powder

      Hi Phil! Pasta is my favorite use for it, but I'd say use it in place of any tomato sauce! It would be great as a pizza sauce, a dipping sauce, on top of a meat, the options are endless!
