Simple Roasted Garlic and Dill Aioli Sauce
This simple roasted garlic and dill aioli sauce is easy to make, full of flavor and the perfect addition to BBQ season. Add it to burgers, chicken or use as a dipping sauce for fries!
Any time I go to a restaurant where they serve burgers or chicken sandwiches, I always look to see if they serve aioli sauce. It is truly such a delicious addition to especially a burger, but even for dipping fries and other goodies! I’m a sucker for garlic, so adding in roasted garlic into this sauce makes it extra delicious. Dill is also one of my favorite herbs and I sneak it into anything I can. Therefore, this garlic and dill aioli sauce is super delicious!
While you can use minced garlic in this recipe, roasting garlic takes it to another level. Roasting garlic makes it wonderfully fragrant and flavorful. It turns the garlic from a hard to super creamy and spreadable.
- Knife and cutting board
- Aluminum foil
- Small mixing bowls
- Spoon and fork
- Measuring cups and spoons
- 1 head of garlic
- 1 tbs olive oil
- 1 cup mayo
- 1 tbs dill weed
- Half lemon, juiced
- Salt & pepper
Remove the outer layer of paper from the head of garlic. Then, using a sharp knife, cut the top of the garlic head off (the end without the root). Place the head of garlic root side down on a piece of aluminum foil and drizzle with olive oil. Wrap the garlic up and roast in the oven at 400°F for 30 minutes or in the air fryer on 390°F for 22 minutes.
Allow the garlic to cool, then squeeze the cloves into a small mixing bowl and mash with a fork and set aside.
In another small mixing bowl, combine mayo, dill, the juice of 1/2 a lemon, roasted garlic and salt and pepper to taste.
Use right away or cover and allow to rest in the refrigerator for 4 hours or overnight before using for a more flavorful aioli sauce.

Fresh or dry dill? I’ll try with fresh since it is in my garden, and add more if it should have been dried. It sounds so good I hope it lasts until I can add more,- I had better plan on a few “trials” before we are done :)
