Ingredients

  • 1 cup smooth or chunky peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup coconut milk
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1-2 tbsp honey or brown sugar (adjust to taste)
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 tsp chili paste or sriracha (optional, for heat)
  • Warm water (as needed, to adjust consistency)
Instructions

In a medium bowl, combine the peanut butter, soy sauce, coconut milk, lime juice, rice vinegar, sesame oil, honey or brown sugar, garlic, ginger, and chili paste (if using).
Whisk the mixture until smooth and well combined.
Gradually add warm water, 1 tablespoon at a time, to thin the dip to your desired consistency. For a thicker dip, use less water; for a pourable sauce, add more.
Taste and adjust seasoning, adding more lime juice for tang, honey for sweetness, or chili paste for heat, as desired.
Transfer to a serving bowl and garnish with chopped peanuts, sesame seeds, or fresh coriander if desired.
