Ingredients
- 1 cup smooth or chunky peanut butter
- 1/4 cup soy sauce
- 1/4 cup coconut milk
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1-2 tbsp honey or brown sugar (adjust to taste)
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1 tsp chili paste or sriracha (optional, for heat)
- Warm water (as needed, to adjust consistency)
Instructions
- In a medium bowl, combine the peanut butter, soy sauce, coconut milk, lime juice, rice vinegar, sesame oil, honey or brown sugar, garlic, ginger, and chili paste (if using).
- Whisk the mixture until smooth and well combined.
- Gradually add warm water, 1 tablespoon at a time, to thin the dip to your desired consistency. For a thicker dip, use less water; for a pourable sauce, add more.
- Taste and adjust seasoning, adding more lime juice for tang, honey for sweetness, or chili paste for heat, as desired.
- Transfer to a serving bowl and garnish with chopped peanuts, sesame seeds, or fresh coriander if desired.
