They're our most requested treat among friends who come over to fill up their Easter baskets and enjoy some snacks! Layers of crumbly chocolate “dirt,” creamy pistachio pudding, and colorful candy make them look like little edible gardens.

- Instant pistachio pudding mix: It's the "grass" layer due to its light green color. Use your favorite brand.
- Cold milk: Don't use room temperature or warm milk, otherwise the pudding mix won't thicken well.
- Cool Whip: Adds a fluffy, airy texture. Feel free to use homemade whipped cream instead.
- Chocolate sandwich cookies (Oreos): Crushed into Oreo crumbs for the garden “dirt” layers.
- Mini marshmallow Peeps: My favorite are the Peeps bunny or chicks for cute toppers.
- Mini chocolate eggs: I love Cadbury mini eggs, but any brand works. Pastel-colored jelly beans work too.
- Easter themed sprinkles: Pastel sprinkles are a wonderful swap.

- Step 1: Crush the chocolate sandwich cookies into fine crumbs using a food processor or a zip-top bag and rolling pin. Transfer to a bowl and set aside.
2. Step 2: In a medium bowl, using a hand mixer, beat the pistachio pudding mix with cold milk for about 2 minutes, until smooth and thick.
3. Step 3: Gently fold in the Cool Whip a little at a time, until the mixture is light and creamy.
4. Step 4: Layer cookie crumbs and pudding in each 6-oz cup, finishing with crumbs on top, then decorate with Peeps, chocolate eggs, and sprinkles. Refrigerate for at least 1 hour before serving.

Ingredients
- 1 (3.4 oz) package instant pistachio pudding mix
- 2 cups whole milk cold
- 1 (8 oz) tub Cool Whip, thawed
- 18 chocolate sandwich cookies Oreos
- 8 Mini marshmallow Peeps bunnies or chicks
- 24 Mini chocolate eggs
- 2 tablespoons easter themed sprinkles
Instructions
- Crush the chocolate sandwich cookies into fine crumbs using a food processor or a zip-top bag and rolling pin. Transfer to a bowl and set aside.
- In a medium bowl, using a hand mixer, beat the pistachio pudding mix with cold milk for about 2 minutes, until smooth and thick.
- Gently fold in the Cool Whip little at a time, until light and creamy.
- In a 6oz glass cup, spoon a layer of cookie crumbs into the bottom of each serving cup, then add a layer of the pistachio pudding mixture.
- Continue layering the cookie crumbs and pudding until the cups are nearly full, finishing with cookie crumbs on top.
- Decorate with mini Peeps, chocolate eggs. Add sprinkles around the chocolate eggs. Refrigerate for at least 1 hour before serving to allow the layers to set.
