Chocolate-Cherry Chia Pudding is a great way to use all those summer cherries. Great as a breakfast, snack or dessert , This Chocolate-Cherry Chia Pudding is healthy and super easy to make.

These delicous summer time cherries are not only delicious but also pack vitamins, minerals, and plant compounds with powerful health effects. They are full of sweet and tart flavor that goes perfect with the chocolate pudding.

I love to top my chia pudding with some chopped nuts. It adds a crunch to this decadent dessert. Here i used almonds you can use any nuts you prefer. If you like you can always top the pudding with a dollop of whipped cream.

Ingredients
For the cherry jam
  • 1 Cup Fresh Cherries( Pitted and chopped)
  • 1-2 Tsp Honey(Optional)
  • 1 Tbsp Water
For the chia pudding
  • 5 Tbsp Chia Seeds
  • 3/4 Cup Milk
  • 2 Tbsp Cocoa Powder(Unsweetened)
  • 1 Tbsp Honey
Instructions
For the Jam
Add 1 cup of cherries (pitted and chopped ) to a sauce pan with 1 tbsp water and some honey.
Cook the mixture on medium heat for 8-10 minutes.Smash cherries down with a back of a spoon or fork.
Once mixture slightly thickens ,get it off the heat.
let it cool down completely.
For the chocolate chia pudding
Add everything chia seeds,cocoa powder,milk and honey in a large bowl and mix everything well together.
Cover the mixture and place in the fridge for at least 3 hours. If you prefer, you can leave them in the fridge overnight.
Use Chocolate chia pudding and cherry jam to create individual serving.
Top this with some fresh cherries and almonds. Enjoy!
