Ingredients

  • 300g bittersweet dairy free chocolate, chopped
  • ½ cup mixed nuts, seeds, and raisins (you can use a mix of almonds, cashews, walnuts, sunflower seeds, pumpkin seeds, and raisins)
  • ¼ cup pomegranate seeds
Instructions

1. Line a flat, sturdy surface like a chopping board with parchment paper and prepare a flat and large space in your freezer. Chop the nuts to desired size.
2. In a heatproof bowl, melt the chopped chocolate over a double boiler (place the bowl over simmering water, ensuring the bowl doesn't touch the water). Use a silicone spatula to stir until smooth and completely melted. You can also melt the chocolate in the microwave by heating in 30-second intervals, stirring after each, until fully melted.
3. Pour the melted chocolate onto the prepared baking sheet and spread it out evenly using the spatula. Aim for a thickness of about ¼ inch.
4. Immediately sprinkle the nut, seed, and raisin mix over the chocolate, ensuring even coverage. Follow by scattering the pomegranate seeds on top.
5. Gently place the chocolate into the freezer and allow the chocolate to set for at least 20 minutes.
6. Once fully set, break the chocolate bark into pieces of your desired size. Store any leftovers in an airtight container in the freezer.
