Gingerbread Cookies
I really can’t believe Christmas is next week, the term “time flies” is an understatement this time of year. Good thing these Gingerbread cookies are easy to make and It’s worth making these cookies just for how wonderful your house smells as they bake, but they are equally delicious, soft in the middle and with the addition of coarse sugar, they have a little crunch. The perfect Christmas cookie if you ask me!
Those crispy sugar bits really make these cookies, you can find coarse sugar in most baking aisles of larger grocery stores or on Amazon.
In a large mixing bowl, start with 1 and 1/2 sticks of butter softened to room temp
Add 3/4 of a cup granulated sugar to the softened butter
And 1/3 of a cup light brown sugar
Cream, the butter and the sugars together, I do this by hand. You can also do this with a hand mixer or a stand mixer.
Add one whole egg
1/3 cup molasses, this is the brand I use, feel free to use your favorite kind
And one teaspoon vanilla extract or vanilla bean paste
Mix those ingredients all together until combined
In a separate mixing bowl, add 2 1/4 cups all purpose flour, 2 teaspoons baking soda, 1/4 teaspoons baking powder, 1 teaspoon cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves.
Whisk that all together
Add the dry ingredients to the wet, a little bit at a time until all is combined
Preheat oven to 350 degrees and line a baking sheet with parchment paper and roll the dough into approximately 1 1/2 inch balls
I rolled them into this course sugar, placed six cookies on each baking sheet as they will spread and baked for 9-11 minutes until the edges become golden brown.

For the cookies
- 3/4 cup salted butter softened at room temperature
- 3/4 cup granulated sugar
- 1/3 cup brown sugar
- 1 whole egg
- 1 teaspoon vanilla extract or vanilla bean paste
- 1/3 cup molasses
- 2 1/4 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
Instructions
To make the cookies
- Preheat oven to 350
- line baking sheets with parchment paper
- mix the softened butter with both sugar
- add egg, molasses and vanilla extract
- mix well
- in a separate mixing bowl, add all the dry ingredients and whisk together
- add dry ingredients alternately with the wet until fully incorporated
- roll dough into approximately 1 1/2 inch balls and then roll into course sugar
- place six balls on cookie sheet and bake for 9-11 minutes until edges are golden brown
- cool on sheet fully before transferring to container
