My chocolate cake mix cookies are SO soft and chewy. You're only 30 minutes away from enjoying this easy cookie recipe!
Do you love easy cookie recipes? I've previously shared recipes like my texas sheet cake cookies and buckeye cookies. These new chocolate cake mix cookies are my favorite yet. Because sometimes I need cookies NOW not later. You only need 4 ingredients and the pudding in the cake mix makes so soft and chewy. They're super customizable too. Use whatever leftover candy or chocolate chips you have on hand in your pantry.
- Cake Mix: It already contains all the essential cookie ingredients like flour, sugar, and leaveners with no measuring!
- Pudding: Grab a cake mix with pudding. The cornstarch makes the cookies extra moist and chewy.
- Oil not Butter: Oil is pure fat with no water so its liquid at room temp. This helps these stay soft for days.
- Chocolate Cake Mix: Any flavor works, but look for one with pudding in the mix to make them extra soft.
- Vegetable Oil: You can also sub canola oil if that's all you have on hand. Melted butter can can also be used in a pinch.
- Use a Cookie Scoop: This helps you cookies look uniform and also bake at the same rate.
- Don't Overbake: They'll firm up as they cool so its okay if the center still looks a tad underdone.
- Cool on Cookie Sheet: A few minutes on the hot pan helps prevent them from breaking when you lift them.
- Chill If Needed: If dough is super sticky you can chill it in the fridge for 20-30 minutes.
