Ingredients
For the Brownies
  • 1/2 cup melted butter
  • 1 cup packed dark brown sugar
  • 2/3 cup coco powder
  • 1/2 cup all-purpose flour
  • 2 eggs- preferably at room temp*
  • 1 tsp vanilla extract
  • 1 tsp salt
For the Pistachio-kataifi Spread
  • 2 1/2 cups shredded kataifi (chopped)
  • 1/2 cup pistachio cream
  • 1 tablespoon tahini
  • 1 tablespoon butter
Instructions
For the Brownies
Preheat your oven to 350°F. Grease and line an 8x8-inch baking pan with parchment paper for easy removal.
In a medium bowl, whisk together the melted butter and dark brown sugar until smooth and glossy.
Beat in the eggs one at a time, then add the vanilla extract. Mix well until fully combined.
Sift in the cocoa powder, flour, and salt. Gently fold the ingredients together with a spatula until just combined. Do not overmix.
Pour the batter into the prepared pan and smooth out the top. Bake for 22-28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
Let the brownies cool in the pan for at least 15 minutes before transferring them to a wire rack.
For the pistachio spread
Finely chop the shredded Kataifi into small pieces.
Heat a pan over medium heat and add the butter.
Once melted, add the chopped Kataifi and toast, stirring constantly, until golden brown and crispy (about 5-7 minutes). Let it cool.
In a bowl, mix the toasted Kataifi with the Pistachio Cream and tahini until well combined.
Once combined, spread the pistachio spread over the brownies until evenly distributed
Generously drizzle either milk or dark melted chocolate, and enjoy!
Tips
  • Make sure that the Kataifi is toasted (golden brown) enough to ensure a satisfying crunch.
  • If you're not a fan of the flavor of tahini, you can omit the ingredient without changing the recipe.
