Brownies for Two
I love a warm fudgy brownies with a big glass of milk. It's so cozy and warm to me. These brownies are chewy along the edges, fudgy on the inside, and easy to whip up. This recipe makes two brownie servings. However the recipe can be easily doubled. The batter can also be premade and baked the next day. If you do choose to pre make the batter you want to let it come up to room temperature before baking.

You’ll need mainly pantry staples to whip up these warm fudgy brownies, but here is a quick list below for your convenience. You’ll need these 8 ingredients, 1 bowl, a whisk, two 5 oz ramekins, and about an hour to make these tasty brownies. Here’s your shopping list!

Brownies are one of the easiest desserts to make. I'm here to give you all the tips and tricks to make the perfect brownies.
- Softened butter vs melted butter: The consistency of your butter is very important when baking brownies. Melted butter is going cause your is going to give your brownie batter the consistency it needs. For this you want the batter to be smooth an liquid. You don't want it to be thick like a paste.
- Don’t over mix the batter: Overmixing your batter will cause it to develop more gluten which can lead to a tough brownie. Only mix the batter until it’s just combined and no streaks of flour remain.
- Don't over bake your brownies: The key to having chewy, fudgy, and even gooey brownies is to under bake them. You still want the top of the brownies to be solid and baked. A tooth pick should come out clean when baked. If you are looking for more of a gooey brownie center you can try baking for 5 minutes less and the tooth pick with come out mostly clean.
- Use quality chocolate: The chocolate you use will affect the overall taste of your recipe. You don't have to go out and buy the most expensive chocolate. However you don't want to buy low quality either. Some brands I like to use are Nestle, Private Selection, and Ghirardelli. I usually look to see which of these are on sale and go from there.
- How to melt chocolate in the microwave: Many people don't know how to melt chocolate in the microwave. Well I'm here to help! The first step is putting the chocolate in a microwave safe bowl. Then you want to microwave the chocolate on 15 second intervals. It is also important to stir the chocolate in between intervals if you are melting a large batch. Stirring the chocolate each time seems like an annoying chore, but its worth it. If you don't stir it you run the risk of burning the chocolate on top. Stirring also helps the chocolate melt at a more evenly.

- 3T Semi Sweet Chocolate Chips
- 2.5T Unsalted Butter
- 1/3c Sugar
- 1 Egg
- 1/4 tsp Vanilla Extract
- Pinch of Salt
- 1T Cocoa Powder
- 2T Allpurpose Flour
Instructions
- In a bowl I will combine my semi sweet chocolate chips and butter.
- Melt the chocolate chips and butter in the microwave using 15 second intervals. Be sure not to burn your chocolate.
- Once your butter and chocolate are melted mix them together until smooth.
- A your sugar to the butter and chocolate mixture and mix well. Adding your sugar at this point will help cool the batter down in preparation for the egg.
- A your egg and vanilla extract to the batter and mix until well combined.
- Lastly we will add the flour, cocoa powder, and salt to the batter and mix until well combined.
- Preheat your oven to 325 degrees.
- Wipe your 5 ounce ramekins with oil or pan spray.
- Add an equal amount of batter in each ramekin. Then tap them gently on the counter to level them out and remove any air bubbles.
- Bake your brownies for 45-50 minutes and a tooth pick comes out clean. If you oven runs a little hot bake for 45 min. If your oven runs true to temp or cooler bake for 50 minutes.
- If you aren't sure if your oven runs hotter or colder I recommend buying an oven thermostat so you can better gage your oven temperature.
