While there are a lot to choose from, this is the baked brie recipe (also known as brie en croute) you need to try! Frequently baked with pecans and brown sugar, this is a nice change up to a classic. Within this post, you'll find multiple ways to customize this delicious recipe to be the hit of your holiday party.
Easy recipe - this quick appetizer takes 5 minutes to prepare and can be assembled a day in advance. Use all store-bought ingredients for super minimal effort and maximum flavor.
Crowd pleaser - customize the dish to create the perfect appetizer with a variety of dippers so everyone can find something they enjoy with the melted brie. This would be excellent next to (or in place of) charcuterie boards as a warm, cozy option. And, of course, is best served with a glass of wine!
Taste & texture - it's sweet, salty, earthy, and fresh in every bite. The flaky pastry holds in all of the gooey brie cheese. Paired with the sweetness of the jam, this delicious baked brie has a little bit of everything!
Serving tip! Use the extra sheet of puff pastry to make spinach and feta pinwheels or a tomato tart for more easy appetizers to serve alongside.
- Sheet of puff pastry. This can be either store-bought or using a homemade rough puff pastry.
- Wheel of brie cheese. Use a 16oz round of brie; President brand is a great all-around choice, or look for a double or triple cream brie.
- Fig jam. Use a store-bought brand of fig preserves. This fig jam recipe is great if you'd like to make your own!
- Egg. For the egg wash to make the pastry golden brown.
- Dippers & garnish. Apple slices, baguette slices, crackers, fresh rosemary, prosciutto, fresh figs, nuts, and honey.
See recipe card for full ingredients list and quantities.
- nuts - walnuts, pistachios, or pecans are all great options.
- fresh herbs - rosemary or thyme leaves are great to pull off and add to a bite of the brie.
- cured meat - while prosciutto is wonderful, crispy bacon pieces would also be a crowd pleaser.
- fruit - use dried figs or dried cranberries.
- jam - cherry preserves and apricot jam or other fruit preserves are great to consider in the pairing.
- caramelized onions - add some on top of the jam before folding the dough.
Hot tip! Want to level up this recipe? Stir in 1-2 tablespoons of dry red wine into the fig jam before spreading it on top of the brie.
One: Gently roll out the puff pastry to ⅛" thick (keeping it mostly square) & place it into a cast iron skillet.
Two: Add the wheel of brie to the center of the puff pastry. Use a butter knife and insert it halfway through the top rind and turn the knife to make holes all over the cheese.
Three: Spread the fig jam on top of the brie wheel to the edges.
Four: Brush egg wash on the inside of the pastry, then fold the corners upwards and press the seams together.
Five: Brush the exposed pastry with egg wash to coat it completely, getting down the edges of the puff pastry.
Six: Bake the wrapped brie until golden brown with a creamy cheese center. Place garnishes around the edges, and finish the tops with chopped nuts, figs, and honey.
Cut a wedge of hot, gooey cheese and flaky pastry and add it to a cracker or your preferred dipper for the perfect brie bites!
Hot tip! Tie a kitchen towel or protector around the handle of the cast iron so no one accidentally grabs it while serving themselves.
I love to both bake and serve the baked brie with fig jam in large cast iron skillets and place the dippers and garnish around the brie. However, you could use a pie plate, cutting board, your favorite cheese board, cookie sheet, baking pan, serving plate, or shallow bowl!
Bake the brie on a piece of parchment paper so you can easily transfer it to your chosen serving dish, then decorate from there.
Well, it's as easy as it sounds! Simply add the cheese wheel to your preferred baking vessel, add the jam, then bake it for 10 minutes and add garnishes and dippers. Note, you shouldn't try to transfer this one, so plan to serve it in whatever you bake it in.
Hot tip! Baking it on parchment paper allows for easy clean-up.
No need, the brie rind is completely edible. Note that it has a more firm texture that holds in a very soft center.
What crackers to eat with brie?Water crackers, rosemary or cracked black pepper, seed crackers or sesame crackers are all great options to go with brie.
Store the baked brie with fig jam in an airtight container in the fridge for one to two days. Microwave the brie in the microwave in 30-second intervals, or bake the brie at 400℉ for about 5 minutes.
Note that this recipe is best enjoyed hot and fresh, and does not store or reheat well.

Baked Brie With Fig Jam
Recipe details
Ingredients
- ▢ 1 sheet puff pastry thawed, or homemade rough puff pastry
- ▢ 1 wheel brie cheese 16oz
- ▢ 1/2 cup fig jam or preserves 170g
- ▢ 1 egg for egg wash
Serving
- ▢ pistachios chopped, for top
- ▢ honey for top
- ▢ fresh figs for top
- ▢ fresh rosemary or thyme chopped for top and sprigs for garnish
- ▢ crackers, bread, etc. for serving (see notes section for ideas)
Instructions
- Preheat the oven to 400℉/205℃.
- Roll out the puff pastry so it's only slightly thinner (keeping it mostly square)
- Add the puff pastry to a cast iron skillet or sheet pan (line with parchment paper if you plan to transfer the brie to another serving dish), then place the wheel of brie in the center.
- Use a butter knife to poke and turn to make holes halfway down into the brie (all over the top). This allows the jam to penetrate into the soft part of the cheese.
- Spread the fig jam on top of the brie, then beat the egg with a splash of water and brush it along the inside of the pastry.
- Fold the pastry upwards to enclose the brie, gently pressing on the seams to seal. Allow part of the fig jam to remain exposed.
- Brush egg wash on the top and outside of the pastry, then bake for 25 minutes until the puff pastry is golden brown.
- Add sliced figs, chopped pistachios, chopped rosemary, and a drizzle of honey to the top. Serve with prosciutto, crackers, sliced baguette pieces, and/or apple slices.
Tips
- Stir in 1-2 tablespoons of dry red wine into the fig jam before spreading it on top of the brie for a major flavor boost.
- Serving suggestions: toasted baguette slices, sliced apples, crackers, and prosciutto.
- Additional toppings: walnuts, pecans, dried cranberries, bacon, and dried figs.
- This appetizer is best enjoyed hot and fresh. Store any leftovers in an airtight container and reheat carefully in the microwave or in a 400℉ for a few minutes until the cheese is soft. Note that the cheese will ooze out since it will have already been cut, which is why it's best to eat it at a gathering in one go.
