Thai-style chicken satay skewers served with a tasty peanut dipping sauce for dunking



When I went to Thailand I ate these skewers almost every day, and love being able to knock them up so quickly in my own kitchen at home. They are so tasty with minimal effort. The recipe can easily be doubled up for families or parties - they are fantastic on the barbecue and people always ask me for the recipe!


I've been tweaking this recipe over the years, and now I am really happy with it. I love serving these either with a crunchy green salad or hot steamed rice. Hope you enjoy too!

Ingredients
For the chicken skewers
  • 2 chicken breasts, cut lengthways into strips
  • 1 tbsp dark soy sauce
  • 2 cloves of garlic, crushed
  • 1 tbsp ginger, grated
  • ½ tsp chilli flakes
  • 100 mL coconut milk
  • ½ tsp cumin
  • ½ tsp ground coriander
For the peanut dipping sauce
  • 3 tbsp peanut butter
  • 1 tbsp dark soy sauce
  • 1/2 tsp chilli flakes
  • 1 tbsp fish sauce
  • 200 mL coconut milk
  • 1 tbsp light brown sugar
  • 1/2 tsp ground coriander
  • Juice of one lime
  • Handful of peanuts, chopped, to serve
Instructions
For the chicken skewers
Mix all your chicken ingredients together and marinade for anywhere between 15 mins and overnight
Thread your chicken pieces onto skewers and grill for a few minutes on each side until golden and cooked through
For the peanut dipping sauce
Meanwhile add all the sauce ingredients to a pan except the lime juice and GENTLY warm it all through. Do not let it boil because it will separate
Once it approaches bubbling, keep the heat steady and let it thicken for a few mins, then add the lime. Check for seasoning – depending on your taste it may need more lime, more soy or chilli
Serve with rice, salad, wedges of lime, extra peanuts and chopped chilli
Tips
  • These skewers work really well on the barbecue as well as on the grill!
  • This works really well with turkey, pork, prawns, beef and tofu! The peanut sauce also makes a lovely dip for veggies!
  • If you are using wooden skewers be sure to soak them in cold water for 20 minutes before threading the chicken on and grilling, this stops them from burning

  • Perfect appetizer as well. In my bubble we have happy hour occasionally and we always have some sort of munchies, sometimes it is a grazing night with cocktails and that's dinner. Plus I have everything in the house except fish sauce, yet sure one of my buddies must have some. If not, will add to my shopping list. Have a couple of well stocked Asian markets in my area. The stuff they carry in the local grocery stores is just so so. Excellent instructions and will make soon! Thanks for sharing. 🐔

    • Live in Los Angeles County and there are Asian Markets everywhere, just do not care for the brands the run of the mill, big box supermarket selection. Lots of Asian friends, they will recommend the brands to look for. One of my favorites is Daikon and the vanilla grocery stores do not carry it and if they do, it is old and shriveled. Same with cilantro. Sad limp wimpy bunches for 99 cents. In a Hispanic, Asian or International stores, 4, 5 and 6 bunches of healthy crisp bright cilantro, same price, 99 cents. Luckily one of my quarantine mates has some so I can make them tonight! Still on my grocery list though. 🐟 Thanks again!
