Ordering takeout is a dangerous slippery slope. It seems like a cheap and insignificant expense at first but it quickly adds up to quite a chunk of money at the end of the month. So, to avoid ordering takeout every time I’m feeling too lazy to cook, too hangover, or have an empty fridge, I came up with this super quick yet comforting recipe that mostly uses pantry items and can be tweaked to use whatever veggies are left in the fridge.

20 Minute Peanut Rice Noodles

Ingredients
- 1 Red onion
- 1 Carrot
- 100 g Rice noodles
- 50 g Spinach
- 2 tbsp Sesame oil
- 2 tbsp Low sodium soy sauce
- 2 tbsp Peanut butter
- 1/2 tbsp Rice vinegar
- 1/2 tbsp Agave syrup or maple syrup
- 1/2 tsp Fresh ginger, grated (or ginger powder)
- 1/2 Lime
Instructions
- Peel and cut the carrots in short thin sticks, and the red onion in wedges (first in half and then into wedges as if you were cutting a pizza). Add 1 tbsp of sesame oil into a pan and put over medium-high heat. Toss in the red onion and carrots and cook for 10 minutes, stirring often. We want the veggies to be crunchy, not too soft, so keep the heat up to medium or medium-high throughout.
- To make the rice noodles, heat a large pot with salted water and cook your rice noodles as per instructions (normally it's 2-3 minutes). Drain and reserve 20 ml of the cooking water for the peanut sauce.
- To make the peanut sauce, combine the peanut butter, soy sauce, remaining 1 tbsp of sesame oil, rice vinegar, agave syrup, and 20 ml of cooking water into a bowl. Stir until combined and smooth (you can use a food processor too).
- Add the noodles and the peanut sauce into the pan so that they mix with the veggies. Give it all a good stir and serve with a squeeze of lime.

Am I missing something ? There's spinach in the ingredients but I don't see it in the recipe instructions.
